Summertime Favorite – Jello 123

I was shocked when I posted a poll on Instagram about Jello 123 and most people had no idea what I was talking about. How is this even possible? One of my favorite memories was spending a full day outside soaking in the summer sun, coming in for dinner and knowing that dessert was Jello 123.

Apparently they stopped making in in the mid 90’s… Booooo

So for those who don’t know it was one mixture that tuned into three different layers. I honestly don’t even try to figure out how it worked.

So this mixture isn’t exactly the same. The last layer is only cool whip. I sadly can’t remember what the last layer tasted exactly like. I guess not having it for 30 years does that.

All you need is a box of Jello. Any flavor you like and Cool Whip. You’ll also need some ice.

We mixed the box of jello with 3/4 cup boiling water. After that we added ice until it reached 1 1/4 cup total. We then added 1/2 ice cold water, it fills in the space between the ice cubes.

Once all of the ice was melted, the entire mixture was poured into the blender.

My son was super excited to use the blender. It isn’t something I pull out a lot so it was almost like a new toy. Get your kids involved in this recipe. The only thing they might not do well with is the hot water, but that cools off quickly.

Once in the blender we added 1/2 cup cool whip. Honestly add more or less depending on what you like.

This is what it looks like with Jello and Cool Whip mixed. That’s all.

Once you have mixed it for 3 minutes or so (this is to incorporate bubbles into the mixture) pour into cups. It doesn’t make too much so plan accordingly. One regular sized Jello box makes two Mason Jar sized desserts.

Immediately after pouring it in the mason jars I could see it starting to separate, which made me smile a little. I knew it was already starting to work.

I left it in the fridge for a few hours. Once it as set I added the last layer of cool whip.

I think the is the perfect summer evening treat, and especially love how it’s fun for holidays… like the 4th of July.

Add a few decorations to it and it automatically makes people smile.
